Have you heard the saying “timing is everything”? Ayurveda encourages us to eat our largest meal while the sun is at its peak strength (lunch time). Why? Our inner sun (which is our digestive enzymes) is also at its peak at that time. Our body mimics the seasons and rhythm of nature. We are nature. Ayurveda teaches us to recognize nature as our body, and our body as nature.
